Easy Oatmeal Cookies

2 cups flour
2 cups sugar
4 teaspoons baking powder
1 teaspoon salt
1 teaspoon nutmeg
1/2 cup vegetable shortening
1/2 cup vegetable oil
2 eggs
1/4 cup grated orange rind (optional)
2 tablespoons orange juice
3 cups uncooked rolled oats
1 cup raisins, plumped (optional)


Directions:

Place the raisins in a microwave container and add 2 tablespoons of water. Microwave on high for 1 minute; leave in microwave until recipe calls for them.

In a large bowl, combine flour, sugar, baking powder, salt and nutmeg. Stir together. Add shortening and oil; blend well. Add eggs, orange rind (if desired), and orange juice (or water.) Mix well. Add oats and stir until combined. Drain the raisins and add them to the dough, stirring gently. Scoop up rounded teaspoons of cookie dough, shape into balls, and place on ungreased cookie sheet. Flatten each ball with a fork to about 1/2 inch thick, keeping a circular shape. Bake at 375° for 14 to 15 minutes or until lightly browned, top and bottom. Remove from cookie sheet while cookies are still hot onto paper towels or a wire rack.

Notes:
This recipe makes an attractive cookie that's crunchy on the outside and chewy on the inside. Vary the spices as desired. I like a combination of cinnamon, cloves and nutmeg.
