Black Walnut Oatmeal Pie
3 slightly beaten eggs
1 cup packed brown sugar
1/2 cup dark corn syrup
1/2 cup evaporated milk
1/2 cup quick-cooking oatmeal
1/2 cup coarsely chopped black walnuts
1/4 cup butter, melted
1 teaspoon vanilla
1/8 tsp. salt
pastry for single crust pie
Directions:
Combine eggs, sugar, syrup, milk, oats, nuts, butter, vanilla, and salt. Mix well. Pour into single crust. Cover edge of pie with foil. Bake at 350° for 25 minutes. Remove foil. Bake 25 minutes more or until top is deep golden brown and a bit puffy.
