Sweet Pickle Relish

4 cups chopped cucumbers
2 cups chopped onions
1 chopped green pepper
1 chopped sweet red pepper
1/4 cup canning salt
3-1/2 cups sugar
2 cups cider vinegar
1 tablespoon celery seed
1 tablespoon mustard seed



Directions:
Combine cucumbers, onions, and peppers in a large bowl. Sprinkle them with salt and cover them with cold water. Let stand for two hours. Then drain the vegetables well, pressing out excess liquid.

Sterilize 7 half-pint jars and prepare canning lids. Combine sugar, vinegar, and spices and heat to boiling. Add vegetables; simmer for 10 minutes. Immediately pack hot mixture into sterile jars, leaving 1/2 inch headspace. Remove air bubbles by sliding a plastic knife around inside of jar. Wipe jar rims with a clean cloth. Adjust lids.

Process 10 minutes in a boiling water bath. (Begin timing when the jars are placed in the boiling water.) Remove jars upright and set several inches apart on a wire rack to cool. If any jars do not seal, refrigerate them and use soon.
