Salted Peanut Chews

Step One: Prepare the crust.

1-1/2 cups flour
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
2/3 cup brown sugar, packed
1/2 cup butter
2 egg yolks
1 teaspoon vanilla extract

Directions:
Preheat oven to 350°. Sift together flour, baking powder, soda, and salt. Stir in brown sugar. Add butter and blend until mixture is crumbly. Stir in egg yolks and vanilla extract. Press into an ungreased 9x13-inch pan and bake for 12 to 15 minutes or until lightly browned.

Step Two: Prepare the topping.
3 cups mini-marshmallows
1 pack (10 ounces) peanut butter morsels
2/3 cup light corn syrup
2 tablespoons vanilla
2 cups rice cereal
2 cups salted peanuts

Directions:
Sprinkle marshmallows over hot baked crust and return to oven for about 1 minute or until marshmallows are lightly toasted. Combine peanut butter morsels, corn syrup, and vanilla in a heavy saucepan and cook stirring constantly until morsels are melted and mixture is smooth. Combine with rice cereal and salted peanuts. Spread over browned marshmallows and chill for 1 hour or more before serving. Cut into 3 dozen squares.
