Double Chocolate Bars
Ingredients for filling:
1 (14 oz.) can sweetened condensed milk (such as Eagle Brand)
4 oz. unsweetened baking chocolate
1 teaspoon. vanilla extract
Ingredients for crust and topping:
1 cup butter or margarine softened
1-1/4 cup brown sugar packed or brown sugar/Splenda mixed
2 teaspoons vanilla extract
1/2 teaspoon baking soda
1/4 teaspoon salt
2 cups all purpose flour
2 cups old fashioned oats, uncooked
1/2 cup M&M baking bits
Directions:
1. Preheat oven to 350°. Cut a piece of aluminum foil about 6 inches longer than the baking dish. Press the foil into the dish, folding the excess foil to the outside of the pan. (You will use it for a handle to lift out the bars after baked.) Spray the foil with non-stick cooking spray.
2. Prepare the filling. Place the milk and baking chocolate in a 1 quart microwave dish. Microwave on high until mixture is hot and steaming. Let it stand for a minute, then stir until the chocolate is melted and the mixture is well blended. Add 1 teaspoon vanilla extract.
3. Prepare the crust. Place butter, sugar, 2 teaspoons vanilla extract, baking soda, and salt in a bowl and beat until creamed together. Add flour, stirring lightly only until blended. Add oats and stir lightly. Press 2/3 of the mixture into the bottom of the baking dish.
4. Spread the chocolate mixture over the crust. Sprinkle remaining oatmeal mixture and M&M bits over the chocolate.
5. Bake about 25 minutes or until lightly browned. Cool on a wire rack. Then lift the foil out of the pan, and cut into bars.
